CMC for Food Industry

Food grade Sodium Carboxymethyl Cellulose (CMC, E466) is a water soluble cellulose ether widely used in the food industry for its thickening, stabilizing, and suspending properties. It dissolves easily in cold and hot water and is commonly applied in dairy and yogurt products, beverages and fruit juices, ice cream and frozen desserts, bakery and wheat based foods, instant noodles, sauces, jams, condiments, and processed foods. CELSOL Ultrapure CMC can partially or fully replace hydrocolloids such as guar gum, gelatin, agar, sodium alginate, and pectin, while offering better process consistency, clarity, and acid stability. At low dosage, it improves texture and mouthfeel, stabilizes emulsions and suspensions, prevents phase separation and whey syneresis, controls ice crystal growth in frozen foods, retains moisture, and helps extend the shelf life of finished food products.

CMC is widely used in paper coating and surface sizing to improve coating quality and paper performance. In coating applications, it enhances water retention and prevents the migration of water soluble adhesives into the paper base, resulting in better leveling and a more uniform, high quality coating. CMC and PAC are widely used oilfield polymers in drilling, completion, and fracturing fluids to control viscosity, reduce fluid loss, and stabilize the wellbore. In drilling fluids, they function as viscosifiers, rheology modifiers, and filtration reducers, providing strong suspension of drill cuttings, effective well wall stabilization, and compact mud cake formation.
